Abstrak

(Channa striata) as an immunomodulatory and glucose-supporting functional food in Dusun Bonto-Bonto, Desa Somba, Maros Regency. The primary issue identified was limited health literacy regarding functional foods and suboptimal utilization of snakehead fish as a local protein source rich in albumin with potential health and economic value. The program applied a participatory approach grounded in empowerment theory, health literacy, and adult learning principles. The intervention included health literacy workshops, hygienic processing training, product co-creation mentoring, and pre–post evaluation combined with participatory reflection. Results demonstrated an increase in average health literacy scores from 54.3 to 81.7 and a 1.30-point improvement in attitude scores on a five-point scale. Participants’ technical skills in processing fish-based products improved significantly, accompanied by increased consumption frequency and the establishment of a local business group. This program contributes academically by integrating biomedical research translation with community empowerment strategies into a measurable intervention model.

Keywords: snakehead fish; immunomodulator; health literacy; functional food; community empowerment.
