This experimental study aims to analyze nutritional variations in the fermentation process that affect bioethanol production from cassava peels and jackfruit peels, as well as to determine the optimal combination of raw materials and nutrients that yields the highest bioethanol content. The bioethanol production process consisted of several stages, including preparation, hydrolysis, fermentation, and purification. The hydrolysis stage employed 5% H₂SO₄ as a catalyst to break glycosidic bonds in polysaccharides, thereby converting complex carbohydrates into glucose. Fermentation was carried out for nine days with the addition of nutrients in the form of NPK fertilizer and urea, followed by purification through distillation. The results showed that cassava peels produced the highest bioethanol content of 6% when fermented with the assistance of Saccharomyces cerevisiae. In contrast, the lowest ethanol content of 2% was obtained from the fermentation of jackfruit peels with the addition of urea. These findings indicate that nutrient addition significantly affects the metabolic activity of Saccharomyces cerevisiae, which can either increase or decrease ethanol production. Excessive nutrient supplementation may disrupt the metabolic balance of the yeast, leading to reduced ethanol yield. Overall, cassava peel waste and jackfruit peel waste shows strong potential as raw materials for bioethanol production, offering an environmentally friendly and renewable alternative energy source.
